Banana Nut Bread
- 1 c mashed very ripe banana
- 1/2 c sugar
- 1/2 c plain nonfat yogurt
- 1/4 cup butter, melted
- 1 t vanilla
- 1 egg
- 1 egg white
- 2 cups flour
- 1 t baking powder
- 1/2 t baking soda
- 1/4 t salt
- 1/4 c chopped pecans (optional)
- Combine first 7 ingredients in large bowl; beat at medium speed until well blended.
- Combine flour and next 3 ingredients; stir in pecans.
- Add flour mixture to banana mixture, stirring until moistened.
- Spoon batter into load pan.
- Bake 350 degrees for an hour and 5 minutes or until toothpick comes out clean.
- Cool 10 minutes in pan on wire rack.
- Remove from pan and place on rack.
