Chocolate Marshmallow Cookies
- 3 cups flour
- 2/3 cup Unsweetened cocoa powder
- 1/2 tsp baking soda
- 2/3 cup sugar
- 1/2 cup light brown sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 2 tsp vanilla
- 2 cups mini chocolate chips
- 8 oz mini marshmallows, frozen
- Preheat oven to 400 degrees Fahrenheit and line cookie sheets with parchment paper.
- Combine flour, cocoa powder, baking soda, and salt. Set aside.
- Cream granulated and brown sugars with softened butter until well combined. Add egg, vanilla extract, and continue blending until light and fluffy.
- fold in the flour mixture and chocolate chips to form a rather stiff dough.
- Take a heaping tablespoon of dough and roughly shape it into a cup. Place 4 or 5 frozen marshmallows in the center, and wrap dough completely around them.
- Place on prepared cookie sheets, spacing about 1½ to 2 inches apart. Bake for 8-10 minutes. Transfer cookies to wire racks to cool completely.
